    The season of joy and togetherness came alive at Taj Malabar Resort & Spa, Cochin, as the iconic waterfront hotel hosted its annual Cake Mixing Ceremony, marking the beginning of the festive season. The evening unfolded in true Taj tradition, with warmth, laughter and a sense of shared celebration that captures the spirit of Christmas.

    The ceremony brought together guests, patrons and friends of the hotel, all joining in the timeless ritual of mixing an assortment of dried fruits, nuts, candied peels and aromatic spices in spirits. The air was filled with the fragrance of the season, a blend of nutmeg, cinnamon and citrus, as participants stirred the ingredients that will soon transform into the hotel’s signature plum cakes and confections.

    Adding to the festive cheer, Taj Malabar Resort & Spa, Cochin announced that its outdoor dining venue, Dolphin’s Point, is now open to the public. Located at the edge of the island where the sea meets the sky, Dolphin’s Point offers an open-air dining experience that celebrates coastal charm and culinary artistry. Guests can enjoy fresh seaside grills, wood-firedpizzas and handcrafted beverages in a setting where every meal is accompanied by the gentle rhythm of the waves.

    Speaking at the occasion, Lalith Viswakumar, General Manager and Area Director for IHCL Kerala, said, “The Cake Mixing Ceremony at Taj Malabar is a beloved tradition that captures the essence of the season, which is joy, togetherness and gratitude. Each year, it brings our guests and team closer as we celebrate the anticipation of Christmas. This year is particularly special as we open Dolphin’s Point to the public, inviting everyone to experience the beauty, flavours and hospitality that define Taj Malabar.”

    Executive Chef Mayur Ramachandran added, “The festive season gives our culinary team a chance to blend heritage with creativity. Every mix we prepare today carries the warmth of tradition and the promise of celebration. At Taj Malabar, our Christmas cakes are crafted using age-old recipes that have been perfected over generations. Each batch is made with premium ingredients that include sun-dried fruits, nuts, candied peels and aromatic spices soaked for months in select spirits to achieve the perfect balance of flavour and richness. The result is a moist, deeply flavoured plum cake that captures the very essence of the season.

    We are also delighted to unveil this year’s festive cake tins and hampers, thoughtfully curated with handcrafted treats, rich plum cakes, cookies and artisanal delights. Every creation from our patisserie reflects the timeless craftsmanship and care that the Taj is known for, making each bite a celebration in itself.”

    The event concluded with the unveiling of the hotel’s signature cake tins and festive hampers for 2025, featuring an assortment of premium treats and gifting options designed to spread the spirit of the holidays.
